Recently I have been experimenting with my crockpot, and have finally settled on a delicious chili recipe. It really is quite simple and can easily be prepped the night before, for a quick morning assembly.
- 1 Green Bell Pepper
- 1 Red Onion
- 1 can Tomato Sauce
- 1 can Diced Tomatoes w/ Green Chiles
- 1 can Black Beans
- 1 can Dark Red Kidney Beans
- 1/2 bag Frozen Corn or 1 can of Corn
- 1 lb Ground Beef
- Fresh Cilantro
- 2 Cups Water
- 1/2tsp Salt, 1/2tsp Pepper, 1tsp Garlic Powder, 1/2tsp Cumin, 1/4tsp Coriander, 1/2tsp Chili Powder, 1/2tsp Paprika
First brown the ground beef. While this is working, chop the bell pepper and onion. Put into Beef, Pepper, Onion, Sauce, Tomatoes, Beans, Water and Corn into CrockPot and give it a stir. Add Spice Blend, stir and finally add roughly chopped fresh cilantro. Stir. Set on Low for 7-8 hours.
